For the second fermentation, instead of the most predictable path, a different choice was made. One of those that challenges tradition, raises eyebrows, and bothers those who prefer rules over flavour. CVRA did not allow the secret to be published. Xico, as we know, doesn't lose sleep over it.

The idea was for it to be a copy, but halfway through, Xico added an Alentejo touch to it.
